– Time: About 30-35 minutes, with cooking time.
– Recipe will make 48 spooky Matcha Halloween Cupcakes


– 2 Cups FLOUR
– 1/4 Tsp (Teaspoon) SALT
– 1/2 Tbsp (Tablespoon) BAKING POWDER
– 6 oz (Ounces) room temperature BUTTER
– 1 1/2 cups SUGAR
– 2/3 cup MILK


1. Preheat oven to 350F
2. Mix salt, baking powder, and flour together in a bowl. Set aside.
3. In a separate cup, mix milk and Matcha tea together. Set aside.
4. In a large mixing bowl, beat sugar and butter together for about 5 minutes until fluffy/creamy.
5. Add eggs, one at a time, to beat mixture in large mixing bowl. Beat each egg thoroughly after each one.
6. Add milk/tea mixture and flour mixture into batter, mixing and beating well.
7. Scoop out mixtures into cupcake tins, filling about 3/4 full. Bake for about 20-25 minutes.
8. Decorate with your favorite frosting.

-2 medium size eggs
-2 tbsp melted butter
-1 1/2 tbsp sugar
-1 1/4 gluten-free flour
-1 cup + 1 tbsp milk
-1/2 pure vanilla extract

-Place all of the ingredients into blender and blend until mixture is smooth.
-While blending, heat a small non-stick skillet over a low heat. Spray skillet with cooking spray.
-Pour enough batter to coat the bottom of the skillet, turning the pan to evenly cover. This step will not require a lot of batter, about 1/4 cup.
-Cook on one side for 1-2 minutes. Carefully flip over to the other side and cook again for another minute.
-Place your finished crepes on a plate and place wax paper between each crepe.
-Serve with any helping of strawberries or blueberries for best results.

Matcha Cream Cheese Cookie Recipe

-2 1/4 Cups All Purpose flour
-3/4 cup sugar
-1 cup softened butter
-1 tsp vanilla
-1 egg
-3 oz cream cheese
-1/4 tsp salt

-In a mixing bowl, combine the sugar, butter, cream cheese, salt, vanilla,and egg yolk until mixture is light and fluffy.
-Beat in a few portions of your flour. Mix each portion until evenly blended.
-When adding the last portion of flour, add in the AOI Matcha Powder.
-Divide the dough into two separate dough balls and roll into logs that measure 2 inches in diameter.
-Cover these logs and refrigerate for 45 minutes – 1 hour.
-Preheat oven to 350 degrees and line a cookie sheet for baking.
-Cut each log into 1/4″ thick round cookies to bake.
-Bake cookies for 10 minutes until the bottom edges are slightly browned.
-Recipe makes 3 dozen cookies.

Matcha Strawberry Cupcakes Recipe

These Matcha Strawberry Cupcakes are the type of dessert treat that can satisfy your sweet tooth as well as give you all the necessary health benefits that come with your matcha powder.  These delectable desserts make a perfect treat for Valentine’s Day as well.

-3/4 cup cake flour
-1/2 cup regular flour
-1 cup of sugar
-1&1/2 tsp baking powder
-1/2 tsp salt
-1/2 cup of unsalted butter than has been softened and cut into small cubes
-2 eggs
-1/2 cup whole milk
-1/2 tsp vanilla

-1 small box of instant vanilla pudding
-1 cup of whole milk
-3/4 cup of heavy cream
-1 tsp of vanilla extract
-10 – 15 large strawberries

-2 eggs
-1/2 cup of sugar
-1/2 tsp. vanilla
-1&1/2 sticks of butter cut into 12 pieces
-Strawberry preserves

-Preheat oven to 325 degrees Fahrenheit
-Fill a cupcake tin with liners and put aside for later usage.
-In a large mixing bowl, combine flours, baking powder, sugar, salt, and the AOI MATCHA POWDER. Mix on a low speed.
-Slowly add in the butter cubes and mix.
-In a large measuring glass, whisk together the eggs, milk, and vanilla.
-Steadily combine the wet ingredients into the dry ingredients bowl. Do not overbeat.
-Fill the cupcake liners about 2/3 full.
-Bake for about 17-20 or until a toothpick can be inserted and pulled out clean.
-To make the custard, mix and whip the first 4 ingredients together and is allowed to thicken for about 3-5 minutes. Place in refrigerator to cool down and thicken.
-Chop up strawberries and place in a bowl. Place this bowl in the fridge and and allow all the water to seep out of the strawberries.
-Mix the strawberries into the custard filling and place in fridge again.
-To make the frosting, put egg whites and sugar into a mixing bowl.
-Place this bowl over a pot of boiling water, making sure that the bottom of the bowl DOES NOT actually touch the water. Mix the egg white and the sugar until all the sugar is completely dissolved.
-Take bowl off of the heat and beat until this mixture doubles in size. Add in the vanilla and then the butter. Beat for another 5-10 minutes.
-Once cupcakes are done baking, remove a small hole from the top center of the cupcakes and fill with the custard and top with the frosting! Enjoy!

Matcha Churros Recipe | The AOI Tea Company

matcha churros recipeA hybrid dessert combining the taste of Japanese matcha green tea and the traditional Mexican dessert favorite, Matcha churros! It is quite the delicious treat that is sure to be hit! All of the great benefits of Matcha infused into this treat that is loved the world over!

-1 tbsp AOI Matcha
-About 7/8 cup (just below one cup) of flour
-3/4 cup of water
-Pinch of salt
-1 tbsp olive oil
-1 tbsp sugar
-1 tsp powdered sugar
-Olive oil for frying

-In a mixing bowl, combine the flour and AOI Matcha
-Add and mix in the water, salt, olive oil and sugar. Mix until all ingredients are combined completely.
-Place this mixture into a pastry squeeze bag.
-Squeeze the mixture into the oil and form a long circle. Let it cook evenly on both sides.
-Let it drain onto a plate with a paper towel to absorb any excess oil. Sprinkle on the powdered sugar!
-Serve and enjoy! A good companion piece is a Matcha Latte!

White Chocolate Matcha Truffles Recipe | AOI Tea Company

gluten-free matcha muffinsPerhaps our most sophisticated dessert entry into our line of recipes, the White Chocolate Matcha Truffles Recipe makes for an incredible, delectable taste like you’ve never experienced before.  Matcha is known for it’s fantastic health benefits, and in truffle form, you can enjoy these amazing treats in  dessert that is not found even in some of the most upscale restaurants in the world.

-3/4 tsp AOI MATCHA POWDER + More for end coating
-10oz white choclate
-1/3 Cup Heavy Cream
-1/8 tsp of salt
-2 tbsp unsalted butter
-2 tsp of hot water (if needed)

-Silicone Ice Cube Tray
-Piping Bag or small plastic storage bag

-In a saucepan, heat up the heavy cream and butter to a warm temperature using a low heat so the butter can melt properly. Once melted, add in the salt.
-Slowly add in the cream mixture to a small bowl of matcha powder and whisk until there are no longer any lumps. It helps to sift the matcha first to prevent lumps.
-Roughly chop up the white chocolate and put into a large glass or stainless steel bowl.
-Put about 4 cups of water into a pot and bring it to a boil. After the water comes a boil, turn off the heat and place the bowl of chocolate on top or into the water. This will help to heat up the bowl and melt the chocolate without burning it (for further illustration, see “DOUBLE BOILER”). Stir occasional with a rubber spatula in order to effectively melt all the chocolate.
-Once chocolate is completely melted, take off the heat and mix in the matcha cream into the chocolate. Mix well. If you find that the mixture starts to separate or look grainy, add in a teaspoon of hot water and you should have a smooth consistency.
-Fill a piping bag or small plastic storage bag with the chocolate mixture. If you are using a small plastic bag, cut a small hole in the corner.
-Fill the silicone ice cube trays with the chocolate mix until they are full. Use a scrapper to make a smooth surface across the top.
-Place the filled molds in the fridge for about 4-5 hours to solidify.
-Carefully pop the cubes out of the tray and sift some matcha powder onto a plate in order to coat all sides of the truffles.
-Add any extra toppings such as diced raspberries that have been freeze-dried to the top for an added flavor twist to your White Chocolate Matcha Truffles.

Mint Matcha Green Tea Latte Recipe

Mint Matcha Green Tea Latte RecipeWarm up the holiday beverage lineup with the tasty treat combining a matcha latte with fresh mint!  Make this Mint Matcha Green Tea Latte Recipe at home and enjoy it all winter long.

-3/4 Cup Water
-3/4 Cup Non-Dairy milk
-1-3 tsp agave syrup
-Mint (3 drops of Peppermint Extract OR 1 peppermint tea bag OR 1 large sprig of fresh mint)
-Foam = 1/3 cup non-dairy milk + 1/4 tsp AOI MATCHA POWDER + drizzle of agave syrup

-Heat water in a small pot just before boiling. Add your choice of mint into this hot water. If you are using the tea bag or mint sprig, let this sit for about 1 minute before removing. If using the extract, there is no need to wait. Remove the sprig or tea bag before proceeding to the next step.
-Add in the AOI MATCHA POWDER to the mint water and whisk until all lumps are gone.
-Heat up your non-dairy milk to a boil. Once hot, pour this into a serving mug along with the mint matcha water mix.
-Stir in the agave syrup to sweeten.
-If you have a foaming machine, use this to create your foam and add to the latte on top.
-Sprinkle a last bit of matcha powder on top and drizzle more agave syrup on top of the foam.

Matcha Shortbread Christmas Cookies

Perfect for a holiday gift!  Often times with holiday desserts family and friends get tired of eating the same old thing at each holiday party they attend, so mix things up this year by adding the amazing taste and antioxidants of matcha to your Christmas cookies!

-2 1/4 Cups Flour
-1 Cup butter, cut into small pieces
-1/2 granulated sugar
-Pinch of salt

-Whisk together the salt and the flour in a small bowl.
-In a separate bowl, beat together the butter, AOI MATCHA POWDER, and the sugar until the mixture is light and fluffy.
-Add half of the flour/salt mixture into the matcha/butter/sugar bowl and mix on a low speed. Once this is fully mixed, slowly add the rest of the contents in the flour bowl. This mixture will appear crumbly , but it can be packed together with your hands. Form this mixture into a large ball.
-Roll out the dough to about a 1/2-inch thickness.
-Cut out as many cookies as possible until you have the remaining dough. Re-roll this dough and cut more cookies until all of the dough is used up.
-Preheat your oven to 325F and bake for about 15-17 minutes until the cookies are dry to the touch.
-Sprinkle with any extra matcha powder for an added flavor.
